1. Around 1 cm ginger
2. 7-10 flakes of garlic
3. Two green chilis
4. 5-7 black pepper seeds.
5. Two teaspoons of coriander seeds (khada dhaniya)
6. Two teaspoons of cumin (khada jeera) seeds
7. Two dried red chilli flakes
8. One sliced tomato cut in small cubes
9. One medium sized onion cut in thin slices
10. Mushrooms chopped
11. Two tablespoon oil
We need to prepare our spices first. For this heat up a pan and put the coriander seeds, cumin seeds, black pepper seeds and dried red chili flakes. Dry roast these spices until they are a little brown in color. It will take around a minute or two. Then put them aside in a bowl and let them get cooled. Do not cover them while cooling as we dont want any moisture in them. After they get cooled put them in the grinder and coarsely grind them. We dont need them totally powdered but just nearly powdered.
Next we need to grind the ginger, garlic and green chili.
Heat up a pan and put oil in it. After the oil gets hot put onions and fry them till they are golden brown. Then add ginger garlic paste which we prepared. Saute them for a minute or two and then add tomatoes. Then add salt to taste. Then let the tomatoes cook. After the tomatoes are cooked add chopped mushrooms and fry them for a minute or two and then add the spices mixture we prepared earlier. Cook for five minutes and you are ready to serve.
